These buttery hand pies are my go to when I want something that feels indulgent but comes together in under an hour. The crispy, golden pastry gives way to a gooey toffee center that's absolutely addictive, and honestly, they're so simple to make that even on busy weeknights I can whip up a batch. Golden syrup, one of the star ingredients here, contains minerals like potassium that your body actually needs. Best of all, with just 20 minutes of prep and 25 minutes in the oven, you'll have warm, homemade hand pies ready to enjoy before you know it.

Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- 2
In a large bowl, combine the flour, salt, and 100g of granulated sugar. Whisk to combine.
Tip: Make sure to sift the flour before measuring.
- 3
Add the softened butter to the dry ingredients. Use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Tip: Don't overwork the dough.
- 4
In a separate bowl, whisk together the egg, milk, and 50g of light brown sugar until well combined.
- 5
Add the egg mixture to the flour mixture and stir until the dough comes together in a ball.
Tip: Be careful not to overmix.
- 6
Divide the dough in half. Roll out each half to a thickness of about 3mm.
Tip: Make sure to chill the butter for the pastry for best results.
- 7
Spoon a tablespoon of toffee filling onto one half of the dough, leaving a 1cm border around the edges.
- 8
Place the other half of the dough on top of the filling and press the edges to seal.
Tip: Use a fork to crimp the edges for a decorative touch.
- 9
Brush the tops of the hand pies with a little water and sprinkle with toffee bits.
- 10
Bake the hand pies for 15-20 minutes, or until golden brown.
Tip: Let cool for a few minutes before serving.
- 11
Allow the hand pies to cool completely before serving.
