Instructions
- 1
Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- 2
In a large bowl, combine the flour, salt, and 100g of granulated sugar. Whisk to combine.
Tip: Make sure to sift the flour before measuring.
- 3
Add the softened butter to the dry ingredients. Use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Tip: Don't overwork the dough.
- 4
In a separate bowl, whisk together the egg, milk, and 50g of light brown sugar until well combined.
- 5
Add the egg mixture to the flour mixture and stir until the dough comes together in a ball.
Tip: Be careful not to overmix.
- 6
Divide the dough in half. Roll out each half to a thickness of about 3mm.
Tip: Make sure to chill the butter for the pastry for best results.
- 7
Spoon a tablespoon of toffee filling onto one half of the dough, leaving a 1cm border around the edges.
- 8
Place the other half of the dough on top of the filling and press the edges to seal.
Tip: Use a fork to crimp the edges for a decorative touch.
- 9
Brush the tops of the hand pies with a little water and sprinkle with toffee bits.
- 10
Bake the hand pies for 15-20 minutes, or until golden brown.
Tip: Let cool for a few minutes before serving.
- 11
Allow the hand pies to cool completely before serving.
