- 1
Preheat your oven to 150°C (300°F). Line a baking tray with parchment paper.
- 2
In a medium saucepan, combine the butter, brown sugar, golden syrup, and salt. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
Tip: Be patient, as this may take about 5-7 minutes.
- 3
Remove the saucepan from the heat and stir in the vanilla extract. Let it cool slightly.
- 4
In a separate bowl, whip the egg whites until they become stiff and hold their shape.
- 5
In another bowl, dissolve the gelatin in 50ml of water over low heat, stirring constantly.
- 6
Slowly pour the gelatin mixture into the egg whites, whipping continuously until stiff and glossy.
Tip: Be careful not to over-whip the mixture.
- 7
Pour the marshmallow mixture onto the prepared baking tray. Use a spatula to shape into desired forms.
Tip: You can also use a piping bag to create more intricate designs.
- 8
Drizzle the cooled toffee sauce over the marshmallows. Sprinkle with toffee nuts and dust with flour.
Tip: You can also use a fork to create a crisscross pattern on top.
- 9
Place the baking tray under the broiler for 30 seconds to 1 minute, or until the toffee is golden brown.
Tip: Keep an eye on the marshmallows, as they can burn quickly.
