Instructions
- 1
Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
- 2
In a medium saucepan, combine the sugar, golden syrup, and butter. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
- 3
Bring the mixture to the boil, then reduce the heat to medium-low and simmer for 5 minutes, or until the mixture reaches 110°C on a candy thermometer.
- 4
Remove the saucepan from the heat and stir in the egg whites until they are fully incorporated. The mixture will bubble up, so be careful.
- 5
Add the caster sugar, baking soda, and salt to the saucepan and stir until combined.
- 6
Stir in the toffee bits and vanilla extract, if using.
- 7
Pour the mixture onto the prepared baking sheet and spread it out into a rectangle, about 5mm thick.
- 8
Allow the mixture to cool and set at room temperature for at least 30 minutes.
- 9
Once set, use a sharp knife to cut the meringue into small squares, about 2cm per side.
- 10
Place the meringue squares on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the meringue is lightly golden around the edges.
- 11
Allow the meringue to cool completely on the baking sheet before serving.
