Instructions
- 1
In a medium saucepan, combine the sugar, water, and butter. Heat over medium heat, stirring occasionally, until the sugar has dissolved.
Tip: Be careful not to let the mixture boil over.
- 2
Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 5 minutes.
Tip: Use a candy thermometer to monitor the temperature.
- 3
Remove the saucepan from the heat and stir in the toffee bits, lemon juice, and lemon zest until the toffee is fully incorporated.
Tip: Let the mixture cool slightly before proceeding.
- 4
Strain the mixture through a fine-mesh sieve into a large bowl to remove any remaining toffee bits.
Tip: Discard the solids.
- 5
Whisk in the vanilla extract and salt until well combined.
Tip: Be careful not to incorporate too much air into the mixture.
- 6
Let the mixture cool to room temperature, then cover it and refrigerate for at least 2 hours or overnight.
Tip: This will help the mixture to chill and set.
- 7
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions.
Tip: If you don't have an ice cream maker, you can also freeze the mixture in a shallow metal pan and then blend it in a food processor once it's frozen solid.
- 8
Transfer the sorbet to an airtight container and dust with confectioner's sugar before serving.
Tip: This will add a sweet and crunchy texture to the sorbet.
- 9
Serve the sorbet immediately, garnished with additional lemon zest if desired.
Tip: This will add a pop of color and flavor to the dish.
