Instructions
- 1
Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- 2
In a medium saucepan, combine the granulated sugar, brown sugar, and 120ml of milk. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
Tip: Use a candy thermometer to monitor the temperature.
- 3
Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 5 minutes, or until the mixture reaches 155°C.
- 4
Remove the saucepan from the heat and stir in the butter and toffee bits until they have melted and the mixture is smooth.
- 5
In a large mixing bowl, whisk together the flour, baking soda, and salt. Add the eggs one at a time, whisking well after each addition.
- 6
Add the flour mixture to the saucepan and stir until just combined.
- 7
Pour the batter into a piping bag fitted with a large round tip. Pipe the batter onto the prepared baking sheet in a log shape, about 2cm in diameter.
- 8
Bake the log for 15-20 minutes, or until it is golden brown and firm to the touch.
- 9
Remove the log from the oven and let it cool for 5 minutes.
- 10
Melt the semisweet chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval.
- 11
Spread the melted chocolate over the cooled log, using a spatula to smooth the top.
