My mum used to make this every Sunday, and now I'm passing it along to you. Treacle Buckle is such a comforting cake with gorgeous dark molasses flavor and juicy sultanas throughout. What I love most is how quick it comes together, ready to bake in just twenty minutes, which means you can have warm cake on the table in under an hour. The golden syrup gives it that deep, rich taste, and the milk keeps it wonderfully moist. Best of all, it's an economical recipe using basic pantry ingredients you probably already have at home. Golden syrup actually contains some minerals like potassium, making this indulgence just a little bit kinder to you.

Instructions
- 1
Preheat your oven to 180°C (350°F). Grease a 20cm (8 inch) square baking tin and line it with parchment paper.
Tip: Use a non-stick tin to prevent the buckle from sticking
- 2
In a large mixing bowl, cream the butter and golden syrup until light and fluffy.
Tip: Use an electric mixer for this step
- 3
Add the sugar, eggs, and vanilla extract (if using) to the bowl and mix until well combined.
Tip: Make sure to scrape down the sides of the bowl
- 4
In a separate bowl, whisk together the flour, baking powder, and salt.
Tip: Make sure to sift the flour for extra lightness
- 5
Add the dry ingredients to the wet ingredients and mix until a dough forms.
Tip: Don't overmix the dough
- 6
Add the milk and mix until the dough comes together in a ball.
Tip: If the dough is too sticky, add a little more flour
- 7
Turn the dough out onto a floured surface and knead a few times until it comes together.
Tip: Don't overwork the dough
- 8
Roll the dough out to a thickness of about 5mm (1/4 inch) and transfer it to the prepared tin.
Tip: Use a rolling pin to get an even thickness
- 9
Sprinkle the sultanas and raisins evenly over the top of the dough.
Tip: Make sure to spread them out evenly
- 10
Drizzle the golden caster sugar over the top of the buckle.
Tip: Use a spatula to spread it evenly
- 11
Bake the buckle for 40 minutes, or until the top is golden brown.
Tip: Check the buckle after 30 minutes and cover the top with foil if it's getting too brown
- 12
Remove the buckle from the oven and let it cool in the tin for 5 minutes.
Tip: Use a spatula to loosen the buckle from the tin
- 13
Transfer the buckle to a wire rack to cool completely.
Tip: Let it cool completely before slicing and serving

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Tropical Quinoa
This tropical quinoa bowl has become my go to weeknight dinner because it comes together in just forty minutes and tastes like a mini vacation on a plate. Quinoa is one of my favorite ingredients since it's a complete protein with all nine essential amino acids, making it so satisfying and perfect for keeping energy levels steady. The combination of papaya, red bell pepper, and fresh cilantro brings vibrant flavors and colors, while the rice wine vinegar and orange zest add just the right brightness. Best part is the ingredient list is simple and affordable, yet feels fancy enough to impress anyone at your table.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.
