This treacle upside down cake is one of my absolute favorites to make when I want something impressive but don't want to spend all day in the kitchen. The whole thing comes together in just fifty five minutes, which makes it perfect for unexpected guests or a last minute dessert craving. What I love most is how the dark treacle creates this gorgeous sticky caramel layer on top that tastes indulgent without being overly sweet. Plus, molasses in the treacle contains minerals like iron and potassium, so you can almost convince yourself it's doing you some good. - 250 gbutter
- 400 ggranulated sugar
- 150 gtreacle
- 100 gbrown sugar
- 250 gall-purpose flour
- 3 gbaking soda
- 1 gsalt
- 2large eggs
- 150 mlwhole milk
- 50 gunsalted butter, melted

Preheat the oven to 170°C (338°F). Grease a 20cm (8in) round cake pan and line the bottom with parchment paper.

In a medium saucepan, combine the treacle, brown sugar, and 50g of the butter. Place over medium heat and cook, stirring occasionally, until the sugar has dissolved.

Bring the mixture to the boil, then reduce the heat to low and simmer for 5 minutes.

In a large mixing bowl, whisk together the flour, baking soda, and salt.

In a separate bowl, whisk together the eggs, milk, and remaining 150g of butter. Add the sugar mixture to the wet ingredients and whisk until smooth.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Pour half of the cake batter into the prepared pan. Top with the treacle mixture, then pour the remaining batter over the top.

Bake for 25-30 minutes, or until a skewer inserted into the center of the cake comes out clean.

Remove from the oven and let cool in the pan for 5 minutes. Invert onto a wire rack to cool completely.
