This tropical fruit dessert is one of my favorite quick fixes when I want something refreshing and a little bit fancy without spending hours in the kitchen. - 2passion fruit
- 50 mlsbelvoir ginger cordial
- 1cooks' ingredients lemon grass(stalk Cooks' Ingredients Lemon Grass, roughly chopped)
- 1mango(large ripe mango, sliced)
- 175 gramslychee(packs lychees, peeled and stones removed)
- 1kiwi(kiwi, peeled and diced)
- 2bananas(ripe bananas, sliced)
- 1ice cream(Ice cream, to serve (optional))

Put the lime juice, passion fruit juice and seeds, and ginger cordial in a small saucepan.

Put the lemongrass in a small food processor and blitz until finely chopped, then add to the pan and heat for 2-3 minutes. Leave the syrup to cool slightly.

Meanwhile, mix the fruits together in a bowl and pour over the syrup. Allow to marinate for about 1 hour. Serve with a scoop of ice cream, if liked.
