You know how hard it is to find a really satisfying gravy that doesn't rely on meat? I've been making this one for years and it's become my go to for every feast. The secret is layering umami flavours from porcini mushrooms, miso paste, and a touch of Marmite to create something genuinely deep and savoury. Plus, those dried mushrooms are packed with antioxidants and add incredible depth without any fuss. What I love most is how straightforward it actually is, given the complex flavour you end up with. Just 75 minutes and you'll have enough luscious gravy to rival any traditional recipe, all without breaking the bank.

Instructions
- 1
Pour 2 tbsp oil into a large saucepan and set over a medium-high heat. Add the onion, celery, carrot and sugar; fry, stirring, for 10 minutes until very golden and starting to soften. Stir in the mushrooms and fry for a further 3 minutes until softened, then add the remaining 3 tbsp oil and the flour. Stir until the oil and flour form a smooth paste around the vegetables, then leave to cook for 2 minutes.

Add the vermouth (or white wine) to the pan, scraping the base of the pan with a wooden spoon, then add the rest of the ingredients except the blackcurrant conserve. Bring to the boil, then lower the heat and simmer the gravy for 40 minutes. Stir the conserve into the pan, cook for 2 minutes, then carefully strain through a fine sieve into a saucepan. Season and keep warm until you are ready to serve. If you would like the gravy to be thicker, simmer for a further 5 minutes, or until thickened to your liking.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
