- 2 tbspcaster sugar
- 2limes(juice, plus extra slices to serve (optional))
- 200 mlsvodka
- 1 tsprose water
- 100 mlscampari

Peel the skin off the watermelon and cut the flesh (about 600g) into cubes. Line a tray with baking parchment and arrange the watermelon cubes over it; freeze for at least 2 hours.

When ready to serve, put 4 glasses in the freezer. Put the sugar, lime juice, vodka, rose water and Campari in a blender or food processor, then start adding the frozen watermelon cubes as you whizz it, until it forms an emulsified pink slushy. Pour into the frozen glasses and serve immediately, with lime slices to decorate, if liked.
