Here's a recipe I absolutely love making on weekends when I have time to let flavors develop. This white chicken chilli is my go to comfort food, especially when the weather turns cooler. The tomatillo salsa gives it such a fresh, bright taste, and white beans are packed with protein and fiber to keep you satisfied. - 300 gtomatillo salsa
- 2 tbsppickled jalapeños chopped
- 14 garlic cloves crushed
- 1 tspdried oregano
- 2 tspground coriander
- 2 tspground cumin
- 1 handfulof coriander leaves picked(stems finely chopped)
- 14 spring onions sliced
- 400 gcan white beans drained
- 12 green peppers roughly chopped
- 1½ lime zested then cut into wedges
- 200 mlhot chicken stock
- 14 chicken breasts
- 1soured cream grated cheddar(cooked rice and tortilla chips, to serve)

Tip the salsa, jalapeños, garlic, spices, chopped coriander stems, spring onions, white beans, green peppers, lime zest, stock and chicken breasts into a slow cooker. Season and mix well, making sure the chicken is submerged. Turn the slow cooker to high and cook for 4-5 hrs.

Remove the chicken to a board and shred using two forks. Roughly mash half the bean mixture using a potato masher, leaving the rest chunky. Return the chicken to the slow cooker. Season. (Or, make this in a pressure cooker on high pressure for 20 mins.) Top with the coriander leaves, soured cream and grated cheddar, and serve with rice, lime wedges and tortilla chips.
