These zingy chicken and avocado buns are my go to when I want something special but don't have loads of time. The whole thing comes together in under an hour, making it perfect for a casual lunch or quick dinner. I love how the creamy avocado pairs with the jalapeño kick and fresh coriander, while the watercress adds a peppery bite and is packed with vitamins. The best part? - 1perfectly ripe extra large avocados(Perfectly Ripe Large Avocado, flesh roughly chopped (about 150g prepared weight))
- 1unwaxed lime(zest and juice)
- 2 tbspmayonnaise
- ½ tspsea salt flakes
- 2salad onions(salad onions, finely chopped)
- 1jalapeño chilli(fresh jalapeño chilli (or green chilli), deseeded and finely chopped)
- 1 handful/scoriander leaves(roughly chopped)
- 200 gramschicken(cooked, shredded chicken)
- 4brioche burger buns
- 80 gramswatercress

Put the chopped avocado in a large bowl. Roughly mash with the back of a fork, then stir in the lime zest and juice, mayonnaise and salt until combined. Add the salad onions, chilli and coriander, then mix in the chicken, until everything is well combined. Taste, adding more lime juice and salt as needed.

Halve the burger buns and lightly toast if liked. Pile the filling into the buns, then top each with a small handful of watercress. Tuck in straight away.
