Instructions
- 1
Preheat your oven to 180°C (350°F) and line an 18x30cm baking tin with parchment paper.
Tip: Use a parchment paper to make it easier to remove the bars from the tin.
- 2
In a large saucepan, combine the butter, brown sugar, and salt. Place the saucepan over medium heat and cook, stirring occasionally, until the butter is golden brown and has a nutty aroma.
Tip: Be careful not to burn the butter.
- 3
Remove the saucepan from the heat and stir in the golden syrup and vanilla extract.
Tip: Let the mixture cool slightly before proceeding.
- 4
In a large bowl, combine the flour, oats, cinnamon, and chopped nuts (if using). Add the egg and mix until the mixture is well combined.
Tip: Use a wooden spoon or your hands to mix the ingredients together.
- 5
Pour the brown butter mixture over the dry ingredients and mix until everything is well combined.
Tip: The mixture should still be slightly crumbly.
- 6
Press the mixture into the prepared baking tin and smooth the top.
Tip: Use a spatula or your hands to smooth the top.
- 7
Bake the bars for 20-25 minutes, or until they are golden brown and set.
Tip: Check the bars after 20 minutes and cover the tin with foil if they are browning too quickly.
- 8
Remove the bars from the oven and let them cool completely in the tin.
Tip: Use a sharp knife to cut the bars into desired size.
- 9
Store the bars in an airtight container for up to 5 days.
Tip: They are best served fresh, but they can be stored for later use.

1950's Stuffed Onions
My mother used to make these stuffed onions back in the 1950s, and I've kept the recipe going all these years. It's such a simple dish that comes together in about an hour, making it perfect for a busy weeknight dinner. The onions themselves are wonderfully nutritious, packed with antioxidants and immune boosting compounds. What I love most is how economical it is to make, using just humble pantry staples like beans and sausage with fresh onions and breadcrumbs. It's comfort food at its finest, hearty and satisfying, with that wonderful homey flavor that takes me right back to my childhood kitchen.

Herb Dip
Herb Dip is a fresh and flavourful dip made with Greek yogurt, parsley, dill and chives, brightened with lemon juice and garlic. This simple dish takes just 15 minutes to prepare and requires no cooking, making it an ideal choice for those seeking a quick and easy addition to any meal or gathering. The combination of herbs and tangy yogurt creates a versatile accompaniment suitable for vegetables, crackers or bread.

Steamed bao buns
Making steamed bao buns at home is easier than you might think, and honestly, it's so much cheaper than buying them from a restaurant. I've simplified the traditional recipe to get fluffy, pillowy buns ready in about an hour using just basic pantry staples. The beauty of this method is that you don't need any fancy equipment or complicated techniques. The rice vinegar adds a subtle tang that keeps the dough tender, while the plain flour provides satisfying carbohydrates to fuel your day. Once you master this simple dough, you'll find yourself making these regularly for quick lunches or impressive snacks.
