This Chinese tempeh salad is one of my go to weeknight dinners because it comes together in under an hour and tastes absolutely delicious. Tempeh is such a great protein choice since it's packed with probiotics that support your digestion while keeping you full and satisfied. I love how simple it is to throw together: you just cook the tempeh, chop your vegetables, and toss everything with a quick homemade Asian dressing. The whole salad is vibrant and crunchy, loaded with fresh greens, cabbage, carrots, and celery, then topped with peanuts and sesame seeds for extra flavor and texture. It's nutritious comfort food that won't break the bank or keep you stuck in the kitchen.
