This creamy tuna and white bean toast is one of my go to meals when I want something satisfying but don't have much time. Ready in just 40 minutes, it's perfect for busy weeknights and won't break the bank. The white beans are packed with fiber and plant based protein, making this dish surprisingly hearty and wholesome. - 160 gramscan essential tuna chunks in sunflower oil(drained)
- 6gherkins(drained and chopped)
- 3 tbspessential greek style yogurt
- 1essential lemons( Essential Lemon, scrubbed, zested then halved)
- 1shallot(finely chopped)
- 2 tspessential dijon mustard
- 400 gramsessential cannellini beans(drained and rinsed)
- ½dill(leaves roughly chopped)
- 4thick slices crusty bread(thick slices bread)
- 1garlic(halved)
- 1essential salted butter(to spread)
- 1salad leaves(to serve)

Tip the tuna into a bowl, mix with the gherkins, yogurt, lemon zest, shallot, mustard, beans and most of the dill. Season well with salt, black pepper and a squeeze of lemon juice.

Toast the bread, then rub it with the cut face of the garlic. Spread with butter, then pile the tuna and bean mixture on top. Sprinkle with the reserved dill. Serve with salad leaves dressed with a little more lemon juice.
