This is one of my go to traybakes whenever I fancy something homey and delicious without fussing in the kitchen for hours. The beauty of it is how straightforward it is to throw together, and you'll have a gorgeous cake cooling on the side in just over an hour. Fresh cooking apples give it this lovely tartness that cuts through the sweetness, and they're packed with fibre which is brilliant for digestion. Plus, baking everything in one tray means minimal washing up afterwards, which is always a win in my book. It's the kind of cake that makes your kitchen smell absolutely wonderful and is perfect with a cup of tea.

Ingredients
- 225 gbutter softened(plus extra for the tin)
- 450 gcooking apples(such as Bramley)
- 1½ lemon juiced
- 280 ggolden caster sugar
- 14 eggs
- 2 tspvanilla extract
- 350 gself-raising flour
- 2 tspbaking powder
- 1demerara sugar to sprinkle

Heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin (approx 27 x 20cm) with baking parchment. Peel, core and thinly slice the apples, then squeeze over the lemon juice. Set aside.

Put the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar.

Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of the tin and remove the paper. Cut into bars or squares.
