This elegant French tart is one of my favorite weekend projects because it comes together so quickly. Starting with a sheet of store bought puff pastry means you skip the most tedious part of traditional French baking, leaving you with about fifty minutes total to create something that looks absolutely showstopping. I layer it with an almond cream that's naturally rich in protein and healthy fats, then top it with sweet pears and melting chocolate. It's fancy enough to impress guests but simple enough that you'll actually want to make it on a regular Tuesday. The combination of crispy pastry, creamy filling, and fresh fruit feels indulgent without being fussy.

Instructions
- 1
Line a tart pan with parchment paper. Preheat the oven to 400 degrees F (200 degrees C).
- 2
Combine butter and 1/2 cup plus 2 tablespoons sugar in a large bowl; beat using an electric mixer until smooth and creamy. Mix in almond flour. Add eggs 1 at a time and mix until well combined.
- 3
Line a tart pan with the puff pastry and prick with a fork all over.
- 4
Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until melted, about 5 minutes. Cool slightly. Cover puff pastry with melted chocolate.
- 5
Carefully pour egg mixture on top of the chocolate on the puff pastry without mixing the 2 layers. Arrange pear slices on top of the tart.
- 6
Bake in the preheated oven until pastry has puffed up and is golden brown, 25 to 30 minutes.

Tropical Quinoa (Ww)
This tropical quinoa bowl has become my go to weeknight dinner because it comes together in just forty minutes and tastes like a mini vacation on a plate. Quinoa is one of my favorite ingredients since it's a complete protein with all nine essential amino acids, making it so satisfying and perfect for keeping energy levels steady. The combination of papaya, red bell pepper, and fresh cilantro brings vibrant flavors and colors, while the rice wine vinegar and orange zest add just the right brightness. Best part is the ingredient list is simple and affordable, yet feels fancy enough to impress anyone at your table.

Ultimate roast potatoes
After years of experimenting, I've finally cracked the code for roast potatoes that are impossibly crispy on the outside and fluffy within. The secret is using duck fat, which contains oleic acid, a heart healthy monounsaturated fat that's actually good for you. What I love most is how simple this really is: just potatoes, fat, flour, and salt. From prep to plate in just over an hour, you'll have restaurant quality results without any fuss. Trust me, once you try these, you'll never go back.

Yuzu Collins
Have you tried a Yuzu Collins? This is my go to drink when I want something refreshing that comes together in just five minutes. The yuzu juice adds this beautiful citrus brightness that feels fancy but honestly couldn't be easier to make. I love that yuzu is packed with vitamin C, so you're basically getting a little immune boost while you enjoy your cocktail. It's the kind of drink that impresses friends without requiring any special bartending skills, perfect for a casual evening at home.
