This recipe is one of my favorite quick weeknight treats, ready in just twenty minutes from start to finish. Caramelized nectarines piled onto crispy toast with creamy ricotta create the perfect balance of sweet and savory, and the best part is you probably have most of these ingredients already on hand. Nectarines are packed with vitamin C, which supports your immune system, and they're naturally sweet so you need very little honey. The whole thing comes together so easily that it works for breakfast, lunch, or a light dessert, making it one of those recipes that feels fancy but requires almost no effort at all.

Ingredients
- 11 teaspoon olive oil
- 11 large nectarine, pitted and cut into 8 wedges
- 22 thick slices crusty bread
- 22 tablespoons olive oil
- ¼ cup whole-milk ricotta cheese¼ cup whole-milk ricotta cheese
- 11 tablespoon crushed sliced almonds
- 22 leaves fresh mint, minced
- 22 teaspoons honey, or to taste
Detail level
Instructions
- 1
Preheat an outdoor grill for medium-high heat and lightly oil grate.
- 2
Drizzle 1 teaspoon olive oil onto a small plate. Place nectarine wedges on the plate and cover all sides with oil. Brush both sides of bread with 2 tablespoons olive oil.
- 3
Place nectarines onto the hot grate and grill 1 to 2 minutes per side; remove to a plate. When nectarine wedges have cooled slightly, cut each wedge in 1/2 lengthwise so you now have 16 pieces.
- 4
Place bread slices onto the hot grate and cook until grill marks appear and bread is toasted, about 1 minute per side; remove to a plate.
- 5
Spread ricotta cheese onto each slice of toast. Arrange 8 nectarine slices onto each toast and top with almonds. Sprinkle with mint and drizzle with honey. Cut each toast in half and serve.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Ultimate roast potatoes
After years of experimenting, I've finally cracked the code for roast potatoes that are impossibly crispy on the outside and fluffy within. The secret is using duck fat, which contains oleic acid, a heart healthy monounsaturated fat that's actually good for you. What I love most is how simple this really is: just potatoes, fat, flour, and salt. From prep to plate in just over an hour, you'll have restaurant quality results without any fuss. Trust me, once you try these, you'll never go back.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
