This recipe is one of my go to breakfast favorites because it comes together in just 25 minutes and requires hardly any cleanup. I love how avocados provide healthy fats that keep you satisfied all morning while the eggs add protein to power you through your day. The best part is that everything cooks right in the avocado halves, making it feel fancy enough for weekend brunch but simple enough for a busy weekday morning. Just scoop, crack, bake, and enjoy a truly nourishing paleo friendly meal.
