This is my go to salad when I want something that feels special but doesn't demand hours in the kitchen. The beauty of it is that the lentils come pre cooked, so you're really just roasting some spiced carrots and throwing everything together. Puy lentils are wonderful because they hold their shape beautifully and pack so much protein and fibre, making this genuinely filling as a main course. Ingredients
- 2 tbspolive oil
- 1 tbspcumin seeds
- 500 gcarrots peeled(halved and cut into batons)
- 1 tbspclear honey
- 250 gpouch cooked puy lentils(or canned, drained and rinsed)
- 11 red onion finely sliced
- 1½ lemon juiced
- 1 largehandful mint leaves(roughly chopped)
- 100 glamb's lettuce
- 85 gfeta cheese crumbled

Heat the oven to 200C/180C fan/gas 6. In a shallow roasting tin, toss together half the oil, the cumin, carrots and some seasoning. Roast for 25 mins, turning halfway through cooking. Drizzle over the honey, stir and roast for 5 mins more.

Meanwhile, gently heat the lentils with the onion, lemon juice, remaining oil and some salt and pepper. Allow to cool slightly while the carrots finish cooking.

Toss the dressed lentils with mint and lamb’s lettuce. Lay warm spiced carrots on top and scatter with feta.
