- 100 mlmayonnaise
- 1fresh red chilli(deseeded and minced)
- 2 tspsmoked paprika
- 1 tbspdijon mustard
- 1 tbspwhite vinegar
- 1 tspsalt
- 1 tspblack pepper
- 10 gfresh coriander leaves(chopped)
- ½ tspcayenne pepper(for garnish)

Place eggs in a large pot and cover with cold water. Bring to a boil, then remove from heat and let sit covered for 12 minutes.
Tip: This gentle cooking method prevents that grey ring around the yolk and keeps eggs creamy.

Transfer eggs to an ice bath and let cool for 5 minutes, then peel and slice each egg in half lengthwise.
Tip: Peeling under cool running water makes the shell come away much more easily.

Scoop the yolks into a bowl and set the egg white halves aside on a serving platter.

Mash the yolks with a fork until smooth, then fold in mayonnaise, minced chilli, smoked paprika, Dijon mustard, vinegar, salt, and black pepper until well combined.

Transfer the yolk mixture to a piping bag fitted with a star nozzle, or simply spoon into each egg white cavity.
Tip: A piping bag creates a nice presentation, but a teaspoon works just as well for casual serving.
