- 1 tbspdijon mustard
- 1 tbspwhite vinegar
- 1 tspsalt
- 1 tspblack pepper
- 10 gfresh coriander leaves(chopped)
- ½ tspcayenne pepper(for garnish)

Place eggs in a large pot and cover with cold water. Bring to a boil, then remove from heat and let sit covered for 12 minutes.
Tip: This gentle cooking method prevents that grey ring around the yolk and keeps eggs creamy.

Transfer eggs to an ice bath and let cool for 5 minutes, then peel and slice each egg in half lengthwise.
Tip: Peeling under cool running water makes the shell come away much more easily.

Tip: A piping bag creates a nice presentation, but a teaspoon works just as well for casual serving.
