These sweetcorn and halloumi fritters are one of my go to meals when I want something that tastes impressive but doesn't demand hours in the kitchen. They're ready in under 35 minutes, which makes them perfect for a weeknight dinner or casual entertaining. The sweetcorn brings natural sweetness and fibre to keep you satisfied, while the halloumi gives you that brilliant crispy exterior and melty centre. I love making a batch of these and serving them warm with the cool, tangy mint yogurt on the side. They're simple to put together, really affordable, and honestly, everyone seems to love them.

Ingredients
- 2essential sweetcorn
- 250 gramshalloumi(coarsely grated)
- 2 tspnigella seeds
- ¼ tspchilli flakes
- 1 clove/sgarlic clove(garlic, crushed )
- 6salad onions(salad onions, finely sliced)
- 3british blacktail free range medium eggs(British Blacktail Free Range Medium Eggs, beaten)
- 4 tbspself-raising flour
- 200 mlsessential olive oil(olive oil, for frying)
- 1lime(in wedges, to serve)
- 250 gramsfage total 5% fat natural greek yoghurt(natural Greek-style yogurt)
- 1garlic clove( small clove garlic, crushed)
- 25 gramsmint(leaved picked and finely chopped)

Stand a corn cob upright on a chopping board, then cut away the kernels using a sharp knife. Repeat with the second cob. Put the corn into a bowl with the cheese, spices, garlic, onions, eggs and flour. Season well and mix until combined.

In a large frying pan, pour in the olive oil to about 0.5cm deep, then heat over a medium-high heat and, when shimmering, transfer 4 heaped dessert spoons of mixture to the pan, flattening out into fritters. Fry for 3-4 minutes, until deep golden on the underside, then carefully f lip over and fry the other side. You should get between 12-16 fritters.

Remove the cooked fritters to a plate lined with kitchen paper, and repeat the process until all the mixture is used up.

Meanwhile, mix the yogurt ingredients together with some seasoning and transfer to a serving dish. Once the fritters are cooked, scatter with sea salt f lakes, then serve with the yogurt on the side and lime wedges for squeezing.
