- 237 mlpanko breadcrumbs

Rinse the asparagus and trim off the bottom 2 inches from the spears. In a wide baking dish or rimmed plate, whisk the eggs. In a separate plate, mix together the panko, parmesan, and black pepper.

Working with 1 spear at a time, dip the asparagus in the beaten egg and then transfer to the panko mixture. Roll the spear around in the panko, coating it evenly. Place the breaded asparagus on the lined baking sheet and repeat until all the asparagus spears are breaded. Leave space between the asparagus spears on the baking sheet.

Bake the fries until golden and crisp, about 20 minutes. There’s no need to flip the spears during baking. Season the fries with a little fine salt and serve warm with ranch.
